For a Godfather-themed dinner, we thought "what better than limoncello?" for the dessert. Here's what we came up with: a three layered cake with raspberry filling, limoncello lemon-curd filling, and a cream-cheese lemon frosting.<br />

<b>Limoncello raspberry cake</b><br />

Ingredients:<br />

<i>For the limoncello lemon curd</i><br />
1 1/2 cups homemade or store-bought lemon curd<br />
1/2 dl vodka<br />
<br />
Make the limoncello curd by simply mixing lemon curd and vodka with a whisk.<br />
<br />
<i>For the raspberry sauce</i><br />
100 g raspberries<br />
1 dl pectin sugar for jams<br />
<br />
Make a raspberry sauce by cooking up the raspberries with the pectin sugar until it starts to thicken and form a jam-like consistency.<br />
<br />
<i>For the cakes own good</i><br />
1 tbsp lemon juice<br />
1 tbsp vodka<br />
<br />
<i>For the lemon cream-cheese frosting</i><br />
500 g cream cheese<br />
1 tsp lemon zest<br />
2 tbsp lemon juice<br />
3-4 dl powdered sugar<br />

Whisk it all together.<br />

<i>For the pink glaze</i><br />
1 tsp lemon<br />
1 tsp vodka<br />
3 dl powdered sugar<br />
1 drop red food coloring<br />

Whisk together<br />

1/2 tsp vodka<br />
1 1/2 dl powdered sugar<br />

Angel food cake, store-bought or homemade<br />

Directions:<br />
Cut the angel food cake into three layers. On the first layer, using a kitchen brush, brush on half of the lemon juice-vodka mixture for the cakes own good so that it soaks up some moisture. Next, add on the limoncello curd. Put on the second layer of angel food cake. Brush again with the lemon-vodka mixture, and then pour over the raspberry sauce. On the third layer, cover with cream cheese frosting and make smooth. At the top, use a spatula to gently spread the pink glaze. Fill a piping bag with the white frosting, and draw lines first horizontally in one direction and then diagonally in another direction to decorate. Viola!<br />

2 egg yolks</div>

1 dl powdered sugar</div>

1/2 tsp vanilla sugar or a drop of extract</div>

2 dl whipped cream</div>

Cloudberries to top with </div>

Directions:</div>

Whip the egg yolks, sugar and vanilla until completely white. In a seperate bowl whip the whipped cream fluffy. Combine the egg yolk/sugar mixture with the whipped cream and that's all folks!</div>

Now fill 4 cups with the mixture, and stick it in the freezer. When you're ready to serve it, just top with cloudberries!</div>

<span style="color: #666666;">On the stove, let the strawberries and lime juice simmer in a small saucepan over medium heat about five minutes. With a whisk, mix in the coconut flour or any other starch to thicken the mixture. Add only 1/2 a tablespoon at a time. When the mixture reaches the consistency of apple sauce, set it to the side to cool for ten minutes. </span></div>

<span style="color: #666666;">With a spatula, add half of the bread to the strawberry mixture and slowly combine. </span></div>

<span style="color: #666666;">Butter an 8x4 inch loaf pan. Pour in the strawberry-bread mixture. With the remaining half of the bread mixture, plop small spoons of it into the same pan. Using a knife, make some zigzags back and forth in the loaf pan to give the two mixes a marbleized effect. Bake in the oven for 50-60 minutes. </span></div>

Heat 1 tbsp butter in a frying pan on medium heat and plop on the first piece of toast. Reduce the heat to medium-low and once golden brown, flip to the other side. And repeat! Bake the salmon in the oven at 425 degrees approx 15 minutes. Mix the cannelini, bell pepper, avocado, lemon, olive oil, salt and cayenne. Let the salmon cool a bit and toss it with the salad.<br />

In a small frying pan, melt olive oil and butter at a high heat. Fry the sliced mushrooms and diced ham. Set aside the ham and mushroom on a cutting board. Mix the eggs and milk in a bowl. In the same frying pan, on medium heat add in the egg mixture. Stir gently with a plastic spatula, so that all the egg is equally cooked yet still light and tender. With the spatula, pat the egg flat and let it cook together for a few minutes. On one half, add in the cooked mushroom, ham, avocado and cheese. Fold over the other half and serve with a cilantro leaf. Thailand is a country full of marvellously friendly people and outstanding food, but one thing it's not full of is the letter "R"<br />

We were lost in a Thai Airport and searching for gate "R" when an airport employee comes up to assist us.<br />
"Oh, you look fo gate 'afta Q'" he says in charming Thai style. And sure enough, Thailand's airport has no gate R, but they do have a gate "After Q" which makes me wonder how many hundreds have gone to gate L before gate "After Q" was invented.<br />

Ingredients<br />
<br />
1 cup Sushi Rice<br />
1 can Coconut Milk<br />
2 Chicken breasts<br />
1 Red Bell Pepper<br />
1 Green Bell Pepper<br />
1 Yellow Bell Pepper<br />
1 Onion<br />
3 tbsp sesame oil<br />
1/2 cup Peanuts<br />
Juice and zest of 1 Lime<br />
1/4 cup Sweet Chili Sauce<br />
<br />
1) Bring 1 can coconut milk and the rice to a boil. Then reduce to low heat and let simmer 20 minutes, until the rice is fully cooked and the coconut milk is absorbed.<br />
2) In a large frying pan, fry thinly slices bell peppers and onions in sesame oil.<br />
3) In another frying pan, fry thinly sliced chicken until completely cooked.<br />
4) Combine fried vegetables, chicken, peanuts, lime juice and zest, and sweet chili sauce. Let simmer 10 minutes on low heat.<br />

Stir almonds into the yolk/sugar mix.</div><div class="separator" style="clear: both; text-align: left;">4) While the almond bowl sits, whisk egg whites until soft peaks form. Once soft peaks form add sugar, 1 tbsp at a time and whisk until stiff peaks form. </div><div class="separator" style="clear: both; text-align: left;">5) Incorporate egg whites with coconut gently. </div><div class="separator" style="clear: both; text-align: left;">6) In muffin tins, put one spoon of the almond mix and press down into the tin. The essentials:<br />
2 tomatoes<br />
1 clove Shallot<br />
1/4 Onion<br />
1 Red or Yellow Bell Pepper<br />
1/4 Cup Red Wine Vinegar<br />
1/2 Cup Olive Oil<br />
Salt and Pepper<br />
Avocado and Olives for finish<br />
<br />
1) Finely, finely, finely chop your little shallot and onion. Let them swim around in red wine vinegar for 20-30 minutes.<br />
2) Once the shallots and onions are finished swimming, add olive oil, salt and pepper. Mix well<br />
3) Dice your plump tamahtoes and bell pepper.<br />
4) Pour the Shallot Dressing over your diced tomatoes.<br />

1 Onion<br />
2 tbsp Coconut Oil or butter<br />

1 can Coconut Milk<br />
3 tbsp Curry Paste<br />
1 tsp cinnamon<br />
1 tsp ginger<br />
2 Tilapia Fillets<br />
<br />
1) Sautee diced onion, banana, bell pepper and curry paste in coconut oil or butter.<br />
2) In a large pot, bring coconut milk to a boil.<br />
3) Add in sautee mix, remaining spices, and tilapia.<br />
4) Simmer about 30, stirring occassionally.<br />

You'll need:<br />
1 jar of peanut butter<br />
2 cups vanilla ice cream<br />
1 tsp vanilla extract<br />
5 tbsp sugar (optional)<br />
1 bar of milk or dark chocolate or 1 cup chocolate chips<br />

Mix peanut butter, ice cream, vanilla extract and sugar until completely blended. Freeze for at least 3 hours. With a melon scooper, scoop the peanut butter mixture into balls and place on a cookie sheet with wax paper. Drizzle on melted chocolate, or dip them in the chocolate and stick them back in the freezer for at least 1 more hour or up to a few months (though they'll probably be eaten in a day!) This recipe resulted from the aftermath of a trip to Costco: I had 5 ripe avocados and a giant pack of spinach that would both go bad in a day. The family absolutely adored these bell pepper sandwiches!<br />

Ingredients:<br />
2 chicken breasts<br />
1 lemon<br />
1 avocado<br />
1 1/2 cup spinach leaves<br />
4 mushrooms<br />
3 bell peppers<br />
2 tbsp balsamic vinaigrette<br />
1 lime<br />
Cilantro<br />
Salt<br />
Pepper<br />

Directions:<br />
Preheat the oven to 425. Place the chicken on a cooking sheet and sprinkle on salt, pepper, and cilantro. Thinly slice 1/2 of your lemon. Cover the chicken with lemon slices and bake in the oven for 20-22 minutes, until it's completely cooked. Thinly dice the avocado, mushrooms, and spinach. Steam the spinach and mushrooms about 5 minutes. Toss in a bowl with the diced avocado. Drizzle balsamic vinaigrette and the juice of the lime and remaining half lemon. Ad salt and pepper as desired. When chicken's complete, remove from oven and create shredded chicken using a fork. Combine the chicken with the avocado salad. Slice the bell peppers into 4 pieces. Put a spoonful of the salad on each piece of bell pepper. <div style="text-align: left;">Use your favorite gluten free cupcake recipe or ready made cupcakes. </div><div style="text-align: left;">For the icing:</div><div style="text-align: left;">1/2 stick butter</div><div style="text-align: left;">2 egg whites</div><div style="text-align: left;">1 bag (16 oz) powdered sugar</div><div style="text-align: left;">Milk</div><div style="text-align: left;">3 cups shredded coconut. </div><div style="text-align: left;">Food colors red, blue, green, yellow, and black</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">In a medium bowl, beat egg whites until fluffy and add 2 tbsp powdered sugar. In a large bowl, beat butter until light in color and creamy. Pour in powdered sugar. Once butter and sugar are combined, add fluffed egg using a spatula. Add milk if desired to soften the icing- but be very careful adding the milk, if there's too much, the icing will run and drip. </div><div style="text-align: left;">Divide the icing into 3 bowls, and set aside 1/2 cup white icing for the characters' eyes and 1/8 cup to dye orange for Elmo's nose. </div><div style="text-align: left;">Dye one bowl red, one bowl blue, and one bowl gary-green. Cinnamon, apple cider vinegar, and lemon juice are all great dietary supplements. Mix that with apples and nuts to get the healthiest snack around!<div><br /></div><div>Apple Crisp</div><div>4 Granny Smith apples</div><div>1 tbsp Apple Cider Vinegar</div><div>1 tsp Cinnamon</div><div>1 tbsp lemon juice</div><div>1/4 tsp salt</div><div>1 1/2 cups sliced almonds, chopped pecans, or a mix of the two</div><div><br /></div><div>Preheat oven to 400 degrees. Peel and slice apples into thin pieces. In a large bowl, mix apple cider vinegar, cinnamon, lemon juice, and salt. Combine with apples until apples are evenly coated. Pour into a pie or casserole dish. Top with almonds and/or pecans and sprinkle on some extra cinnamon. Bake 45-50 minutes at 400 degrees.</div><div><br /></div><div>Vanilla Sauce</div><div>1 cup milk (can be substituted for coconut, almond, soy milk, etc)</div><div>1 tbsp vanilla</div><div>1-2 tbsp cornstarch</div><div><br /></div><div>Bring milk and vanilla to a boil in a small saucepan. Oh right... soul soup: A hearty, comforting stew that works as either a side dish or the main meal. Not exactly what I'd had in mind to beat the heat on an 80 degree day, but I pretended it's winter and ate away!<div><br /></div><div>Ingredients</div><div>1 lb ground beef or buffalo</div><div>1 onion finely chopped</div><div>1 bell pepper diced</div><div>8 cups chicken broth</div><div>2 cubes vegetable buillon</div><div>1 cup marinara or tomato sauce</div><div>5 tomatoes, quartered</div><div>2 tbsp garlic</div><div>Curry powder</div><div>Cumin</div><div>Oregano</div><div>Salt</div><div>Pepper</div><div>Any array of comforting spices you feel fit to throw in</div><div><br /></div><div>Pour chicken broth and tomato sauce into a large pot. Heat on medium. Once boiling, add in tomatoes, garlic, curry, cumin, oregano, salt, and pepper. In a large frying pan on medium heat, fry ground beef or buffalo in small pieces until completely well done. Add into soup mix. Fry onion and bell pepper in the same pan about 5 minutes on low to medium heat and add to the soup. Stir until everything's well combined. If more taste is desired, add more curry and cumin, or some hot sauce to spice it up! Sooo... I chose oven-baked eggplant for this dish and it turned out gorgeous and delicious, almost like a gluten-free lasagna!<div><br /></div><div>Ingredients</div><div>2 Eggplants, thinly sliced</div><div>2 Chicken breasts</div><div>1 can tomato sauce (homemade or store bought)</div><div>2 tbsp garlic</div><div>Italian seasoning</div><div>Olive Oil</div><div>1 cup Parmesan cheese, shredded</div><div><br /></div><div>Preheat oven to 425 degrees. Rub chicken with 4 or 5 tbsp italian seasoning, 1 tbsp garlic, salt, pepper, and 1 tbsp olive oil. Place chicken on a stone pan and set aside. </div><div>In a deep bowl mix 1/2 cup olive oil, salt and 1 tbsp garlic. Lay eggplant slices in olive oil mixture for 10 seconds and place eggplant on a pan. Do not lay eggplants over each other, lay them side to side. Put eggplant and chicken in a 425 degree oven for 15 minutes or until ready. </div><div>Check that the chicken isn't pink, and that the eggplant is slightly crisp on the outside, but juicy in the middle. Once both are done, slice the chicken into thin slices and toss in a bowl with the eggplant, tomato sauce, and 1/2 cup parmesan. Incorporate the ingredients and transfer to a serving dish.
